Our Story

After years in the restaurant and hospitality industry, our story of Greek cuisine began in 2020 with yērōs – Authentically Greek in St. James, New York. Inspired by the food our mom prepared as we grew up, we wanted to share the family recipes we loved with others. We built the brand and concept around those recipes, authentic ingredients, and welcoming hospitality. After establishing yērōs as a community favorite, we sold the business to family so we could focus on refining and launching THE GREEK, with a vision to bring our food to communities across the country.

What began on Long Island has grown into a multi-location restaurant brand serving guests in New York and North Carolina. Inspired by traditional Greek cuisine and built for today’s lifestyle, THE GREEK combines authentic flavors with the convenience of modern fast-casual dining.

To support that vision, we built Thavma Manufacturing into the production foundation behind our restaurants. By manufacturing our own signature products, we preserve our family recipes and maintain consistent flavors and quality as THE GREEK grows into communities across the country.

As the brand has grown, so has our commitment to the communities we serve.
